Soul: Candied Yams (Vegan)

Despite the name, this dish is traditionally made with sweet potatoes, not true yams. Sometimes referred to as “Covington” sweet potatoes, these popular orange tubers are naturally sweet and available in any grocery store. Some people like to bake their “yams,” but we think boiling them is much easier, especially when the skin slides right off after cooking.

Ingredients:

Procedure:

  1. Boil sweet potatoes in pot until soft (approx 20 min), then drain and set aside to cool
  2. Peel and slice yams into ½-inch pieces
  3. Melt margarine in pot; then add orange juice, sugar, vanilla, and spices (if desired)
  4. Stir while simmering over low heat until sauce is thickened (about 5 minutes)
  5. Return yams to pot and mix well
